Fiery Hot and Sour Soup What makes this classic Szechuan dish unusual is that the heat comes from ground pepper instead of fiery chili peppers. (The sour flavor comes from rice vinegar). This recipe for Hot and Sour Soup (suan la rou si tang) is made with thin strips of pork, tofu and a number of Chinese vegetables that provide an interesting contrast in color and texture. To turn this into a vegetarian dish, leave out the pork and increase the tofu. All of the ingredients can easily be found in Asian markets. Fabulous Five-Spice Powder Five-spice powder encompasses all five tastes: sweet, sour, bitter, pungent, and salty.
